Did you have a look at the book section on customers? It's from 1.3, but documents many more fields from the input screens which you also find in 1.7 or 1.8: https://book.ledgersmb.org/1.3/split-book/sec-workflows-customers-intro.html (you need to start there, but please also read the next two sections)
